Apple cider vinegar (ACV) has been used as a health remedy for centuries in many parts of the world. Where does Apple Cider Vinegar come from?

The French phrase vin aigre, meaning sour wine is what we call Vinegar. The sourness comes from the acetic acid produced by fermenting the apple juice. When Yeast, is added it digests the sugars in apples and converts them into alcohol.

Apple Cider Vinegar has been shown to have numerous benefits for blood sugar and insulin levels.  It improves insulin sensitivity during a high-carb meal by 19–34% and significantly lowers blood sugar and insulin responses.  Taking two tablespoons of apple cider vinegar before bedtime can help reduce fasting blood sugar in the morning by up to 4%.

Many other studies done on humans shows that apple cider vinegar can improve insulin function and lower blood sugar levels after meals.  For these reasons, consuming controlled amounts of apple cider vinegar can be useful for people with diabetes, pre-diabetes, or those who want to keep their blood sugar levels low for other reasons.
